Soft succulent chicken breast pieces on a bed on fresh greens

Ingredients Serving: 2

Chicken breast whole 1no
Oregano 1 tablespoon
Salad leaves as per choice
sweet corn half cup
Onion chopped 1no
Coloured Capsicum chopped 1no small
Tomato chopped 1 no
Salt and pepper to taste
Balsamic vinegar 1 teaspoon

Instructions

Marinate the chicken breast with salt, pepper, balsamic vinegar
Add half the oregano to the chicken and let it rest for 30 mins
Heat a pan very hot put the chicken on it and top it with all the chopped vegetables
Let the chicken seal from one side
Flip over the chicken and roast the other side too
Let the vegetables also get lightly roasted
Sprinkle salt, pepper, little oregano on the vegetables
For the plating: First place the salad leaves
Place the roasted vegetables on the center
Sprinkle the sweet corn
Sprinkle the rest of the oregano and little salt
Slice the roasted chicken breast and place it on top of the vegetables
Serve hot
