Ingredients Serving: 2

  1. 6 Round small purple or white brinjal
  2. 1 onion finely chopped
  3. 1 tsp Ginger garlic paste
  4. 2 to 3 tbsp peanut chutney powder
  5. 1/2 tsp turmeric powder
  6. 1 tsp sugar or jaggrey
  7. 1 sprig curry leaves
  8. 1/2 tsp mustard seeds
  9. 1 tsp Chilli Powder
  10. 2 tbsp Oil
  11. Salt to taste

Instructions

  1. Wash and clean the brinjal
  2. Heat the heavy pan and add oil
  3. When oil is hot add mustard seeds. when it crackles add onion and stir well
  4. After a minute add ginger garlic paste, stir add curry leaves. stir
  5. Fry until raw smell goes . Now add salt and stir
  6. Make a cross on brinjal without cutting full now take peanut chutney powder stuff the brinjal and add this to onions
  7. Add turmeric powder. chilli powder and jaggery and stir well
  8. Now add 1/2 cup water, stir gently cover and cook for 15 minutes or until done
  9. Yummy and very easy dish is ready. serve with chapati or parota.
