Spiced Prune Pudding with Caramel sauce.

This pudding is a must during winters and christmas in my home. Please do try it.

Ingredients Serving: 5

  1. 200 gms delmonte pitted prunes chopped
  2. 200 ml water
  3. 150 ml orange juice
  4. Zest of half an orange
  5. 1 tsp Lemon juice
  6. 1 tsp Baking powder
  7. 1 tsp vanilla extract
  8. 200 gms Sugar
  9. 100 gms Butter
  10. 3 eggs
  11. 250 gms apf
  12. 2 1/2 tbsp cocoa powder
  13. 1/2 tsp each of cardamom and dry ginger powder.
  14. Ingredients for caramel sauce
  15. 2/3 cup sugar
  16. 20 gms butter
  17. 4 tbsps cream

Instructions

  1. Preheat your oven at 180 degree C.
  2. Line your baking tin with parchment paper and keep aside.
  3. In a deep vessel add water, orange juice, prunes and set to boil once it boils add lemon juice and simmer for 5 mins and then switch off.
  4. Cream butter and sugar till light and fluffy.
  5. Add in eggs one by one and beat with each addition.
  6. Add in flour , baking powder,s pice powder and cocoa powder and fold in.
  7. Now add prune mixture and mix again. Transfer batter in the tin and bake for 25-30 mins or till a tooth pick inserted comes clean.
  8. for caramel sauce
  9. Melt sugar in low flame when it reaches dark brown color add butter and melt it. Switch of the gas and add cream and stir well.
  10. Serve the cake when it's still warm with a dollop of icecream and drizzling of caramel sauce.
