Ingredients Serving: 12

  1. Medjool Dates 12 pitted and chopped coarsely
  2. Goji berries 1/4 cup
  3. Dried figs 5
  4. Almonds 1/4 c
  5. Rolled oats 2 tbsp
  6. Sunflower seeds 1 tbsp
  7. Pepita 1 tbsp
  8. Chia seeds 1 tbsp
  9. Sesame seeds for rolling

Instructions

  1. Soak figs and goji berries in hot water for 20 mins. Drain completely
  2. Place almonds, sunflower seeds, chia seeds, oats and pepita in a blender and blend to a coarse mixture
  3. Transfer to a bowl. Now add the dates, figs and goji berries to the blender and pulse once
  4. Tip the nuts and seeds mixture to this and pulse again a couple of times until everything just comes together
  5. Shape into 12 small balls.
  6. Spread sesame seeds on a plate and roll the balls gently to coat
  7. Refrigerate. Enjoy as desired
