Ingredients: Plain flour - 1 1/2 cup; Wheat flour - 1 1/4 cup; Baking powder - 2 tsp; Salt - 1/4 tsp; Sugar - 1 cup; Milk - 1/2 cup; Oil - 2 tbsp; Vanilla extract - 2 tsp; 1 cup of almonds and cashews; 1/2 cup of dried cranberries and cherries; Apple cider vinegar 1tbsp diluted with 3 tbsp water

ABOUT Mixed Dry Fruits Biscotti RECIPE

Choose your favourite dry fruits and make this wonderfull crunchy biscotti. It goes well with a cup of hot tea or coffee.

Ingredients Serving: 10

Plain flour - 1 1/2 cup
Wheat flour - 1 1/4 cup
Baking powder - 2 tsp
Salt - 1/4 tsp
Sugar - 1 cup
Milk - 1/2 cup
Oil - 2 tbsp
Vanilla extract - 2 tsp
1 cup of almonds and cashews
1/2 cup of dried cranberries and cherries
Apple cider vinegar 1tbsp diluted with 3 tbsp water

Instructions

Sift the Dry ingredients and keep aside (except sugar)
Cream the sugar and milk for 2 to 3 mins. Add in the apple cider vinegar, vanilla essence, oil and continue for another 3 mins. ( I used a stand mixer here)
Fold in the flour in batches and the dry fruits too.
Dough would be sticky
Dust some flour over the dough and bring together to form a ball
Now divide the dough into 2 equal balls and make a log at least 3 inches wide
Dust some castor sugar over the logs
Now bake these logs for 30 to 35 min in a preheated oven at 180 C degrees
Take out and let it cool for around 15 mins
Now with a serrated knife make slices of the log in one single go. (do not use the sawing motion)
Now arrange the slices in the tray and let it bake further for 7 to 8 mins on each side
Open and cool on a cooling rack
Serve
