Delicious amalgamation of fruits and cake, coated with chocolate

Ingredients Serving: 10

  1. Cake flour - 1.5 cups
  2. Eggs - 3
  3. Milk - 3 tbsp
  4. Baking powder - 1 tsp
  5. Vanilla extract - 1 tsp
  6. Sugar - 3/4 th cup
  7. Butter - 1/2 cup + 1/3 rd cup
  8. Delmonte pineapple slices (chopped) - 1/2 cup
  9. To make the poppers :
  10. Delmonte pineapple slices(chopped) - 1/4 th cup
  11. Delmonte peach halves (chopped)- 1/4th cup
  12. Delmonte prunes (chopped) - 1/4 th cup
  13. Pineapple cake (crumbled)- 1.5 cups
  14. Milk/dark chocolate - 130 gm

Instructions

  1. For cake flour, take 1.5 cups of maida , remove 3 tbsp of the maida and add 3 tbsp of cornflour.
  2. Whisk the butter and sugar till very fluffy.
  3. Make a mixture of eggs + milk + vanilla extract.
  4. Sieve the flour and baking powder, keep aside.
  5. Now fold in the egg mixture and flour mix into the butter mixture in 2 parts, that is add half the egg mixture first and then add the flour mixture, followed by egg mix and then flour mix.
  6. While adding the last part of the flour mix, chopped pineapple to the flour itself and then fold in the complete mixture.
  7. Pour this mixture into a greased loaf tin and bake for 50-55 minutes in a preheated oven at 165 degrees C. Cool it.
  8. Mix the chopped pineapples, prunes, peaches with the cake crumbles.
  9. Form little balls from the above mix. The fruits have enough moisture in them so as to wet the cake mix.
  10. Chill them in the fridge for 10 minutes, while melt the chocolate using a double boiler or a microwave.
  11. Line a tray with butter paper, dip the cake balls and put them onto the tray using a fork and spoon.
  12. Sprinkle some sprinkles on them and chill them in the fridge for 20-25 minutes and serve.
