Guava cheese /perad or guava sweet is a very delicious sweet made from Guava and Sugar It is soft and chewy fudge like sweet
Lovely, what an innovative and interesting recipe... it must be so flavourful... would love to try it out very soon...
Wash the guava well and boil them in a pressure cooker for 2 whistles or in a vessel until soft .
Cut them,scoop the seeds. Mash the pulp, or grind it to a pulp using your mixer/grinder .
Boil the seeds with 1/2 cup water and grind it too.
Weigh the pulp ,you need exactly the same amount of sugar ,if you get 2 cups pulp we need 2 cups sugar
In a non stick pan or a thick bottomed vessel put the pulp and the sugar .
Cook on low flame ,stirring with a wooden spoon .
Once it begins to bubble add lime juice , few drops of colour and ghee/butter .
Keep stirring constantly you will see that the mixture beings to thicken .
To test if it's done drop a small drop of mixture in a bowl filled with cold water if the mixture disintegrates means it still needs to cook .
Keep stirring till it gets thick and begins to stick to the spoon .
Test the mixture again by dropping it in another glass of cold water ,if it forms a ball the mixture is ready.
Remove the mixture on a well greased thali and spread with the spatula .
Allow it to cool for 4-5 hours and then cut it into diamond or square shape
