ABOUT Natun aloo dum RECIPE

An usual accompaniment to the typical Bengali maida luchi or the winter special koraishutir kochuri.

Ingredients Serving: 4

  1. 500 grams small sized baby potatoes
  2. For making a masala paste
  3. 2 tomatoes
  4. 1 inch piece Ginger
  5. 3 green chillies
  6. 1 teaspoon jeera powder
  7. 1/2 teaspoon haldi powder
  8. Salt to taste
  9. 1 teaspoon sugar
  10. For tempering
  11. 1/2 teaspoon jeera whole
  12. 1/4 teaspoon hing powder
  13. 3 choti elaichi
  14. 4 lavang
  15. 1 inch piece dalchini
  16. 2 tej patta
  17. Water as required
  18. 4 teaspoons mustard oil
  19. 1 bunch dhania patta for garnishing

Instructions

  1. Boil and peel the potatoes.
  2. Make a paste of the ingredients mentioned above.
  3. Heat oil in a wok and put the ingredients mentioned under tempering.
  4. Now add the masala paste of tomato, ginger and green chillies. Cook for sometime.
  5. Add the potatoes. Now mix well.
  6. Add haldi powder , jeera powder , salt and sugar.
  7. Cook for a few minutes and add water as required for gravy. It is best if it just about sticks around the potatoes.
  8. Cook till done. Remove from heat. Garnish with dhania patta and serve with luchi or koraishutir kochuri.
