About 1 cup cooking oats
1 tbsp oil
1 tsp mustard seeds
1 medium size finely chopped onion
1/4 cup finely chopped green bell peppers
1/4 cup boiled peas
1/2 tbsp salt or as required
1/4 cup finely chopped or shredded carrots
1 medium size finely chopped tomato
1 finely chopped green chili
1/2 tsp turmeric powder
1/4 cup finely chopped cilantro
1/2 tsp lemon juice or as required
1/2 cup water
Some peanuts for garnishing (optional)
Instructions
Take a pan and roast the oats for 2 minutes on medium gas.
Now take roasted oats in the plate.
Use same pan
Heat 1 tbsp oil in a pan.
When oil is hot add mustard seeds,
After few seconds add green chili.
After few seconds add onion and bell pepper. Stir it for 1 minute.
Then add salt and turmeric powder.
Add peas, carrots and tomato and cover with lid.
Stir for 2-3 minutes on medium gas or until vegetables become tender.
Now add oats and 1/2 cup water and cover it and cook it for 2-3 minutes on medium low gas.
Turn off the gas. Add cilantro and lemon juice. cover with lid.
Garnish with peanuts
Oats bhurji is ready . Serve hot with Parantha or chapati. Enjoy lunch

I love trying out recipes with oats, this looks amazing..
