1) INGREDIENTS FOR VEGETABLE HAKKA NOODLES
Boiled Noodles 1/2 kg
Carrot in juliennes 2
Capsicum in juliennes 2
Red chilli 1
Garlic minced 1 tsp
Ginger 1/2 tsp
Onion sliced 4
Chinese cabbage 1/2 cup
Spring onion in juliennes 3
Veg stock 2 tbsp
Soya sauce 2 tbsp
White pepper 1 tsp
Salt to taste
2) INGREDIENTS FOR SZECHWAN RICE
Rice 1 cup
oil 2 tbsp
Star anise 1
Dry Red chilli 1
Szechwan peppers 2
Medium sized onion 4
Cubed carrots 1/2 cup
Cubed french beans 1/2 cup
Coloured capsicum 1/4 cup
Spring onions 2 to 3
Soya Sauce 1 Tbsp
Rice vinegar 2 tbsp
Ajinomoto 1/2 tsp
Salt to taste
sugar 1/4 tsp
Five spice powder 1 tsp
3) INGREDIENTS FOR VEGAN POTSTICKERS WITH MUSHROOM AND TOFU RECEPI
Olive oil 2 tbsp
Crumbled tofu 1 block
Mushroom diced 1/2 cup
Cabbage 1/2 cup
Minced ginger 2 cloves
Soy Sauce 2 tsp
Sesame oil 1 tsp
Red pepper flakes optional
Fresh cilantro 2 tbsp
Salt to taste
Wonton sheets as per requiement
4) INGREDIENTS FOR RICE MANCHURIAN
For balls
Grated cabbage 1 cup
Grated carrots 1 cup
Capaicum finely chopped 1
Onion chopped 1
Garlic minced 1 tbsp
Ginger minced 3 tbsp
Green chillies slit 3
Soy sauce 3 tbsp
White pepper 1/2 tsp
Cornflour 2 to 3 tbsp
Salt to taste
Boiled rice 2 cups
Water 5 Cups
Oil for frying
For gravy
Chilli oil 2 tbsp
Garlic 4 tbsp
Ginger 3 tbsp
Onion chopped 1/2 cup
Corn flour dissolved in water 3 tbsp
Ajinimoto 1/2 TSP
White pepper 1 tsp
Salt to taste
Vinegar 1 tsp
5) INGREDIENTS FOR SURPRISE CUTLETS
Cabbage 1/2 cup
Carrot 1/3 cup
Capsicum 1 cup
Soya Granules 1 cup
Salt to taste
Onion finely chopped 1
Green chillies 2
Coriander
Bread crumbs 1 cup
Oil for shallow frying
6)INGREDIENTS FOR RIVIERA STUFFED TOMATOES
Rice boiled 1 cup
Pea 1/2 cup
Cabbage 2 tbsp
Onions 1
Garlic 3 tbsp
Cheese as per requirement
Salt to taste
Tomatoes scooped 5
Cream 3 tbsp
Chilli flakes 2 tbsp
oil 2 tbsp
7). INGREDIENTS FOR SIZZLING EFFECT
Sizzler plate 1
Aluminum foil
Cabbage leaves
Ice chilled water
Instructions
1) PROCEDURE FOR VEGETABLE HAKKA NOODLES
Boil noodles
Heat Chinese wok n add oil
Add whole red chilli , garlic , saute 10 second
Add carrots n capsicum. Toss well
Add vinegar n soya sauce
Toss very well
If noodles seem dry add veg stock
Mix well
Garnish with spring onion greens and serve
2) PROCEDURE FOR SZECHWAN RICE
Boil rice
Heat oil..add star anise.. After 2 minute..remove anise
Add dry red chilli n Sichuan pepper
Add ginger, garlic, vegetables ,toss well
Add soya sauce..
Add rice n remaining seasoning
Toss on high flame
Add salt to taste
Add five spice powder n mix well
Serve hot
3) PROCEDURE FOR VEGAN POTSTICKERS WITH MUSHROOM AND TOFU
Saute tofu mushroom ,cabbage in olive oil
Add ginger n garlic
Saute
Add remaining pepper n seasoning
Cook for 5 minutes
Remove from heat n cool
Place 1 tbsp of mixture into wonton wrapper
Fold it as you wish.. Any shape that you like
Now steam it .. The same way as we steam momos
4) PROCEDURE FOR RICE MANCHURIAN
Boil carrot ,cabbage,beans ,cauliflower for half a minute
Drain them over a muslin cloth
Add in spring onions,onions,capsicum,ginger,Garlic,
Squeeze water
Add in rice,salt,all seasoning n sauces ,cornflour, mix all
Make balls n fry
Take wok..add oil
Add garlic n ginger
Saute 2 minutes
Add onion, green chilli, stir for a minute
Add sauces to stock
Add salt
Add cornflour paste
Cook all for 2 minute
Adjust seasoning as per taste
Serve hot with balls in gravy... Garnish spring onion green
5). SURPRISE CUTLETS
Mix all the ingredients
Shape it into a cutlet form
Shallow Fry in oil
6). RIVIERA STUFFED TOMATOES..
Take a wok..add oil
Add in veggies.. Saute little bit
Add in peas
Add in rice
Add in all seasoning
Cook for 4 to 5 minutes
Switch of flame
Add in cream n cheese
Stuff it in tomato
Top it with more cheese
Bake it at 180 C for 10 to 15 minutes
7 ) PROCEDURE FOR SIZZLING
Take an iron plate of sizzler
To its base.. Add in aluminum foil
Above it... Cover it with cabbage leaves.. 3 to 5 layers
Then.. Heat it for around 20 minutes
Now start placing all your cooked stuff
Let it heat for another 10 minutes
Then.. Put the iron plate on wooden tray
Take it to ur serving table
Add in ice chilled water
Enjoy the sizzling sound.
