ABOUT Thai Rice Noodles in Spicy Peanut Sauce RECIPE

Asian cuisine is known for its colours, fragrances & flavours. Every single bite is packed with tons of soothing spices that mingles with the body & soul. This post is a vegetarian take on the Thai Rice Vermicelli loaded with vegetables and a punch from a spicy peanut sauce.

Ingredients Serving: 2

  1. 1 packet (250 gms) Rice Vermicelli
  2. 1 cup shredded spring onions (white and green portions both)
  3. 1 cup (mix of cabbage, bok choy, mushrooms)
  4. 100 gms Tofu/ Paneer cut into 1 cm thick slabs
  5. 1 cup (mix of broccoli and carrots)
  6. 10-15 peanuts chopped
  7. 1/2 teaspoon toasted sesame seeds
  8. 1 tablespoon + 1/2 tsp of sesame oil
  9. Salt to taste
  10. Fresh coriander for garnishing
  11. For the Spicy Peanut Sauce:
  12. 3 tablespoon creamy peanut butter
  13. 1/4 cup water
  14. 2 tablespoons fresh lime juice
  15. 2 teaspoons soy sauce
  16. 1 tablespoon granulated sugar
  17. 2 chili-garlic paste
  18. 1 medium garlic finely chopped

Instructions

  1. In a large container, boil some water with 1 tsp salt. Once the water boils, add the rice vermicelli and cook for 5 minutes. The vermicelli is done when it turns transparent. Remove from flame and drain.
  2. In a bowl, mix in all the ingredients for peanut sauce and keep it aside.
  3. In a wok pan (broad base pan/kadhai), heat the sesame oil and roast the peanuts. Remove the peanuts once it's golden brown. Now add in the spring onions, mushrooms, bok choy, broccoli, carrots and cabbage. Add in the salt. Cook on a high flame for 2-3 minutes.
  4. Take a bowl. Add in the rice vermicelli. Now toss in the peanut sauce and mix it carefully. Now add in the vegetables and mix it well.
  5. Arrange it in a plate. Sprinkle some sesame seeds and peanuts. Serve it warm or cold.
