ABOUT Achari Baingan RECIPE

It's a North Indian brinjal recipe that can be served with Roti, Rice or Parantha.

Ingredients Serving: 4

  1. Small Brinjals 6-7
  2. Hing powder 1 pinch
  3. Mustard Oil 1 tbsp
  4. Onion 1 small
  5. Ginger 1/2 inch piece chopped
  6. Garlic 6 cloves
  7. Turmeric powder 1/2 tsp
  8. Red chilli powder 1/2 tsp
  9. Salt as per taste
  10. Mango pickle masala/ paste 1 tsp
  11. Coriander for garnishing

Instructions

  1. Cut all the brinjals into 4 pieces and soak them in salt and turmeric water.
  2. Take a pan, add in the mustard oil and wait till it becomes hot. Add in the Hing/Asafoetida powder, then add in the chopped garlic and ginger.
  3. Cook it for a minute, then add in the chopped onions. Cook till the raw smell goes away and they are a little brown in color.
  4. Add in the turmeric powder, red chilli powder and salt. Cook it for a minute.
  5. Remove the water from the brinjals and add them to the pan.
  6. Cover and cook for 12 mins in a low flame.
  7. After this time, add in the mango pickle masala and cook it uncovered on a medium flame. Roast the baingans nicely.
  8. Take it out on a serving dish and garnish it with coriander leaves.
