Cut all the brinjals into 4 pieces and soak them in salt and turmeric water.
Take a pan, add in the mustard oil and wait till it becomes hot. Add in the Hing/Asafoetida powder, then add in the chopped garlic and ginger.
Cook it for a minute, then add in the chopped onions. Cook till the raw smell goes away and they are a little brown in color.
Add in the turmeric powder, red chilli powder and salt. Cook it for a minute.
Remove the water from the brinjals and add them to the pan.
Cover and cook for 12 mins in a low flame.
After this time, add in the mango pickle masala and cook it uncovered on a medium flame. Roast the baingans nicely.
Take it out on a serving dish and garnish it with coriander leaves.
SERVING: 4
