The quintessential summer salad, the watermelon feta is dressed up with a herby mint vinaigrette which makes the salad even better

Ingredients Serving: 6

  1. 500 gms peeled and cubed Water melon (2cm cubes)
  2. Handful roughly chopped flat leaf parsley
  3. ½ a red onion sliced
  4. Handful good quality black olives
  5. Pepper spice feta: 250 gms Greek feta
  6. ½ tsp cumin seed
  7. ½ tsp coriander seed
  8. ½ tsp whole black pepper
  9. For the mint vinaigrette
  10. 2 tbsp olive oil
  11. 1 tbsp red wine vinegar
  12. ĵ tsp chilli flakes
  13. ½ tsp sugar
  14. 2 tbsp chopped mint

Instructions

  1. Make the pepper spiced feta first. Using a pestle and mortar coarsely crush the pepper, cumin and coriander seeds.
  2. Place the feta on a plate, sprinkle over the spice mix, turning the feta so all sides are coated and drizzle with extra virgin olive oil and keep it refrigerated overnight
  3. Make the vinaigrette. Make the dressing by mixing the oil, vinegar, chilli flakes and mint with some seasoning
  4. To assemble. In a bowl toss the watermelon, red onion, parsley, olives and spoon generous amount of dressing.
  5. Plate in a bowl and place the cubes of peppered feta on top and drizzle the olive oil from feta.
