Taste bhi and health bhi.Come diwali and we tend to gorge on deep fried snacks and varieties of sweets.So i decided to prepare this recipe,which has the goodness of fresh fruits with just a tinge of diwali magic.

Ingredients Serving: 4

  1. Thick custard - 1/2 cup
  2. Cream- 1/2 cup
  3. Any sweet(ladoo ,barfi,etc ) or even an assortmnt of all these
  4. Apple(chopped) - 1/2 cup
  5. Pomegranate- 1/2 cup
  6. Pears(chopped) - 1/2 cup
  7. FOR GARNISH
  8. Peanut chiki - small pieces
  9. Chocolate fara in toothpicks- to make phuljhadis
  10. Hershey's chocolate syrup

Instructions

  1. Firstly prepare basic vanilla custard.Prepare it a bit thick and let it cool.
  2. Then whisk custard ,cream together,add very little sugar and mix well.Chill in refrigerator.
  3. For chocolate faras,add 2-3 tsp cocoa pd.while whisking the milk and rice flour mixture in medium heat.Finally when done ,add little ghee to this mixture and knead to a soft dough.Prepare thin cylindrical faras and steam.
  4. When done take these faras out ,insert a toothpick,roll them over crushed peanut chikki to give a phooljhadi look and chill.Use this for garnishing the parfait
  5. Take 4 serving glasses.Put the custard ,cream mixture into piping bag and add a layer of this mix to the bottom of each glass
  6. Crumble the ladoos/barfis .Spread evenly over the custard layer
  7. Top this with chopped apple,pear and finally pomegranate.
  8. Again put a layer of the custard mixture.
  9. Finally garnish with chocolate syrup,chikki pieces and fara phooljhadi
  10. Special diwali parfait is ready.
