ABOUT Curry Leaves Fried Rice RECIPE

This dish is an excellent way of using leftover rice. It accompanies any dish or curry very nicely.

Ingredients Serving: 4

  1. 1-2 cups cooked rice
  2. 1-2 tsp red chilli powder
  3. 1 tsp Ginger Garlic paste
  4. Bunch of curry leaves
  5. Salt according to taste
  6. 1 green chilli slit

Instructions

  1. Heat 1 tbsp oil in a kadai.
  2. Add ginger garlic paste, chilli powder and 5-6 curry leaves. Cook till fragrant.
  3. Once the leaves are well cooked, add the rice and mix well.
  4. Cook for 5 minutes, stirring occasionally in between.
  5. Add the rest of curry leaves, little chilli powder, green chilli and salt and cook for another 1/2 minute or so.
  6. Serve hot with chutney, achar or any other curry.
