ABOUT Pina Colada flavoured Sabudana shots RECIPE

Perfect for a light dessert, these shots are Vrat or Navratri special. I keep them lightly sweetened as I like the flavor of the fruit and coconut milk to come through. Stylish enough to serve at a dinner party or high tea. You can even sprinkle sugar and caramelize the top or serve with salted caramel sauce. Any tropical fruit pairs with this carbohydrate rich low fat dessert.

Ingredients Serving: 4

  1. 1/3 cup sabudana or tapioca pearls
  2. 200 ml Coconut milk
  3. 4-5 tsp sugar or to taste
  4. Pinch of upwas wala namak or rock salt
  5. 1 cup finely chopped pineapple or kiwi or lychee or grapes (Save the juices)

Instructions

  1. Soak the sabudana in just enough water to cover after washing well. Boil 1 cup of water with the salt and sugar. Once the water comes to a rolling boil, add the sabudana which would be all swollen by now and would have no water.
  2. Stir and reduce heat to medium. Add in the coconut milk and stir continuously, on low heat for 10 minutes, until the dish looks gelatinous and the sabudana tapioca pearls are cooked.
  3. Transfer to a bowl and chill. Chop your tropical fruit and save the juices. Stir the juices into the cold tapioca. Check for sweetness. You can either mix the fruit into the tapioca or layer it.
  4. The coconut milk adds a lovely flavour to the fruits and the Sabudana just ends up melting in your mouth.
  5. Layer the chilled pudding in shot glasses alternating with layers of fruit.
  6. Easy to make and serve. The combination of fruits is totally what is available to you.
