Ingredients Serving: 4

  1. For Dhoklies:
  2. Wheat flour - 1 cup
  3. Besan - 2 tbsp
  4. Red Chilli powder - 1 tsp
  5. Turmeric - 1/2 tsp
  6. Coriander powder - 1 tsp
  7. Garam masala - 1 tsp
  8. Salt as per taste
  9. Asafoetida - 1/2 tsp
  10. Oil - 2 tbsp
  11. Water as required
  12. For guar phali:
  13. Cluster beans - 250 gram
  14. Green chillies-4-5 (chopped)
  15. Red chilli powder - 1 1/2 tsp
  16. Turmeric - 1/2 tsp
  17. Coriander powder - 2 tsp
  18. Mango powder - 1 tsp
  19. Garam masala 1 tsp
  20. Ginger juliennes soaked in lemon juice 2 tbsp
  21. Oil - 2 tbsp

Instructions

  1. Dhoklies:-- mix all ingredients except oil in a bowl, add oil in steps till mixture just takes the shape of your fist,
  2. Add water and make a tight dough. Keep aside for 30 minutes. Make small balls and slightly flatten them with your thumb.
  3. Heat water in a bowl. When the water boils put in the dhoklies, boil the contents till dhoklies come up and begin to float on water. Dhoklies are ready. Strain and keep aside.
  4. For Guar phali: Wash and string the beans, cut into pieces, boil in water till beans become soft/ tender. Strain and squeeze the beans lightly to remove excess water.
  5. Heat oil in a pan, add ajwain, asafoetida and saute for a minute. Add beans, stir then add other ingredients except garam masala and ginger.
  6. Mix well and saute for 2 minutes. Add in the boiled dhoklies, mix well and saute for 5 minutes. Cover with lid and let it cook for a few minutes.
  7. Pour in a serving bowl and garnish with garam masala, ginger juliennes. Serve hot with chapati. This can also be served as a snack with the evening tea.
