ABOUT Egg less Banana Choco Chip Muffins RECIPE

These are moist and delicious muffins with the wonderful flavour of bananas. Great for breakfast and tea and kids also love it in their tiffin. You’ll love to bake them for a journey or for a picnic.

Ingredients Serving: 12

  1. 1 cup all-purpose flour
  2. ½ cup whole wheat flour
  3. ¾ cup powdered sugar
  4. 1 teaspoon baking powder
  5. ½ teaspoon baking soda
  6. ¼ teaspoon salt
  7. 3 ripe bananas
  8. 1 tablespoon honey
  9. 1 teaspoon vanilla essence
  10. 1/3 cup olive oil or any neutral vegetable oil.
  11. 2-3 tablespoons buttermilk (if required)
  12. ¼ cup choco chips

Instructions

  1. Preheat oven to 180 degrees C. Grease one standard 12 cup nonstick muffin tray.
  2. Whisk together first six ingredients in a large bowl. Keep aside.
  3. Puree the bananas. Add honey and vanilla essence.
  4. Add oil and stir till you get a uniform mixture.
  5. Add dry ingredients and mix till well combined. Do not over mix.
  6. The batter should be of pourable consistency. If it is a little thick, add buttermilk.
  7. Fold in choco chips. Leave some to sprinkle on top.
  8. Pour batter into the cups (two-thirds full). Put the remaining choco chips into the cups.
  9. Bake for about 25 minutes or till the top is golden and muffins are firm to touch.
  10. Turn off the heat. Remove the tray from oven and remove muffins after 10 minutes.
  11. Cool on a rack. Serve after 2 to 3 hours or next day.

Is it safe to cook honey in oven??? I m just asking bcoz it is said that honey gets toxic after direct heating

can we pour the batter directly into the mould? or do we need to put liners first?
