ABOUT Puff Pastry RECIPE

The principle behind the pastry is to create many layers of the dough and butter by folding and turning the two together. These pastries make me feel really proud. At first I was afraid because after so much hard work if it didn't puff everything will be spoilt. These pastries did not let me down, they puffed up and were clearly visible.

Ingredients Serving: 10

  1. Plain flour 3 cups
  2. Butter 1 and 1/2 cup
  3. Lemon juice 1/2 tsp
  4. Salt 1/2 tsp
  5. Water 1 cup

Instructions

  1. Sift flour into a bowl. Add salt and 1 tsp of butter. Mix it well with your fingers.
  2. Add lemon juice and 3/4 cup of water. Then mix it well, add the remaining water if the pastry is dry. Make a dough ball. Cover it up and let it rest for 15 mins.
  3. Now place the dough on a lightly floured work surface and roll it into a large rectangle. Place the square of the butter on the center of the pastry. Fold from both the sides to seal the butter.
  4. Lightly tap the top of the pastry with a rolling pin to seal the edge and to enlarge it. Then fold it from both the sides and fold it on the center. Wrap and refrigerate for 20 mins.
  5. After 20 mins, roll the pastry into a large rectangle and fold it. Repeat the same process 4 more times. The dough is now ready.
  6. Roll the dough as thin as 1/4 inch thick to make pastries. Cut the dough as per your choice.
  7. Bake in a preheated oven at 200 degrees C or until you see them puff up and just start to brown. This will roughly take 10 mins.
  8. Serve them warm.
