Blanch cleaned spinach in hot water for 30 seconds.
Drain in a colander.
With chilli and curry powder grind the spinach into a puree.
Take 1 cup of all purpose flour/whole wheat flour in to a mixing bowl and mix with salt.
In the centre break one egg and beat lightly.
Add spinach puree 1 tablespoon at a time and start mixing.
Rub with your fingers and mix well. Gradually add more puree to make a dough.
Add 1 teaspoon of olive oil and knead nicely to form a dough.
Now again take 1 cup of flour to a bowl and add salt and oregano.
Break 1 egg at the centre and slowly beat .
Mix them well and knead to form a dough.
Cover and keep aside for 10 minutes.
after 10 minutes take the dough(green) and roll it to form a big chapati.
With the help of a knife cut the chapati into thin strips.
Heat sufficient water in a saucepan.
Add 1/2 teaspoon of salt and let it boil.
Drop the green Pasta strips in the boiling water to cook for about 5 minutes.
Drain in a colander and rinse with cold water.
Similarly with the white sough also make pasta strips.
Boil them in salted water for 5 minutes.
Drain in a colander and rinse with cold water.
For the pasta sauce chop tomato and carrot roughly and place them in a grinder.
Grind to make a smooth paste.
Heat one tablespoon of olive oil in a pan and saute onion and garlic for 2 minutes.
Add tomato and carrot puree along with one tablespoon of tomato paste.
Stir well and add salt, sugar ,chilli powder and oregano.
Add one cup of water and cook in low heat for about 10 minutes.
After 10 minutes your sauce will be ready.
Add both types of boil pasta to the sauce.
Stir well to coat the sauce to pasta strips.
Add grated cheese, olives and chilli flakes according to your taste.
Mix well and remove from heat.
Healthy, delicious and colourful pasta is ready to serve now.
