Ingredients Serving: 6

  1. 6 oranges(preferably naval)
  2. 500 grams caster sugar
  3. 250 millilitres water
  4. 6-8 cardamom pods (crushed)
  5. 500 grams greek yoghurt
  6. a pinch of cinnamon powder

Instructions

  1. cut a thin slice off the top and bottom of the oranges
  2. slice off the skin vertically, turning the orange as you go(remove as much of the pith as possible)
  3. Slice each orange into 5mm rounds, trying to reserve as much juice as you can.(use a bowl/a deep dish to cut the oranges in)
  4. To make the caramel, put the sugar, water and cardamom pods into a large saucepan
  5. swirl and then bring it to a boil, without stirring, until the syrup becomes thicker and darker
  6. Take the saucepan off the heat and tip in the oranges and any juice that's collected in the bowl.
  7. Quickly coat the orange slices in the caramel and pour on to a flat plate; act with speed otherwise the caramel will set before you can get it out of the saucepan
  8. Let the oranges cool, and then put them in the fridge to chill for a little while.
  9. serve chilled caramelised oranges drizzled with cinnamon, accompanied with some Greek yogurt
