Ingredients Serving: 6

  1. 175 grams softened butter and extra for greasing the pan
  2. 175 grams sugar
  3. 150 grams All purpose flour
  4. 3 eggs
  5. 25 grams chopped pistachio
  6. 25 grams chopped walnuts
  7. 25 grams chopped Almonds
  8. 25 grams chopped cashews
  9. 25 grams pecans
  10. 50 grams chocolate chips
  11. 2 taps Baking Powder
  12. 1/2 tsp Baking soda
  13. Fresh orange juice 50 ml
  14. Vanilla essence 2 Tbsps
  15. salt- 1/2 tsp

Instructions

  1. Pre heat oven to 165c (325f)
  2. Grease and line a 900 grams loaf tin with baking parchment paper !
  3. Beat the softened room temperature butter and sugar with an electric whisk until light and fluffy !
  4. Mix all dry ingredients and sieve well !
  5. stir chopped nuts, chocolate chips and flour mixture until just incorporate !
  6. beat eggs in to the butter mixture one at a time fully blending each egg before adding next !
  7. Stir vanilla extract and orange juice in to the mixture !
  8. Fold all in cut and fold method !
  9. Pour the batter in to the prepared loaf pan !
  10. Tap pan on the counter to release any air packets !
  11. Bake in the preheated oven for about 40 minutes or until the inserted toothpick comes out clean !
  12. Let the loaf cake rest in the pan for 20 minutes over the wire rack !
  13. Slice and serve the yummy moist buttery cake !
