ABOUT Orange and Mint jelly RECIPE

If you make jelly at home, you will be able to enjoy all the wonderful pure flavours of the fruits. The sabayon is a delicious way to finish this jelly for a special meal, but it is also very good searved plain.

Ingredients Serving: 4

  1. 400 ml fresh orange juice, strained
  2. 10 gm gelatin
  3. 200 ml water
  4. 100 gm Caster sugar
  5. 2 oranges
  6. 2 tbsp chopped mint leaves, plus extra for decoration
  7. 1 cup sabayon or whipped cream
  8. 4 cherries
  9. For sabayon:
  10. 3 egg yolks
  11. 40 gm castor sugar
  12. 150 ml any Sauternes wine
  13. 1 tbsp chopped mint leaves

Instructions

  1. Pour half of the orange juice into a bowl and soak gelatin in it for 15 minutes
  2. Meanwhile put the water and sugar into a saucepan and bring in to a boil.
  3. Take off the heat. Add gelatin. Mix well until the gelatin has completely dissolved.
  4. Add remaining orange juice. Mix it well and keep aside to cool.
  5. Take orange zest and mint leaves. Divide between 4 pretty glasses and pour in just enough jelly to cover them. You do not have to fill them up.
  6. Top with mint sabayon or whipped cream.
  7. To prepared of sabayon:
  8. Put the egg yolk and sugar in a heatproof bowl. Set over a saucepan of simmering water and whisk until very pale.
  9. Keep whisking while adding wine and continue whisking until the mixture holds its shape.
  10. Take off the heat and whisk until it cools.
  11. Fold in the chopped mint leaves.
  12. To serve, spoon the mint sabayon over each jelly, then decorate with cherry and mint leaves.
