Ingredients Serving: 8

  1. For Syrup: Sugar 2 cup
  2. Water 1 1/4 cup
  3. Green cardamom 2-3
  4. For gulab jamun: Khoya/mava 1 cup
  5. Paneer grated 3/4 cup
  6. All purpose flour 3 tbsp
  7. Fine semolina/ sooji 2 tbsp
  8. Cardamom powder 1/2 tsp
  9. Milk 1-2 tbsp
  10. Baking powder 1/4 tsp
  11. Oil / desi ghee for frying

Instructions

  1. Grate khoya and mash it well.
  2. Add paneer, baking powder, sooji, cardamom powder and mix well.
  3. Gently mix in the milk to form a dough, if it appears dry you can add a little more milk. Cover and leave for 20-30 minutes.
  4. Prepare the syrup and turn off the heat before it reaches one string consistency.
  5. Make balls from the dough and keep aside.
  6. Heat ghee till medium hot, add gulab jamun balls and keep rotating till evenly browned.
  7. Soak gulab jamuns in a large bowl with sugar syrup so that they do not overlap, keep for 1- 1/2 hours.
  8. Tastes best when served hot.
