ABOUT Stuffed baby Zucchini RECIPE

Zucchini is a very healthy and delicious vegetable. And baby zucchinis are even tastier. So when I got baby zucchinis in the market, I made these yummy stuffed baby zucchini that can be served as appetizer/snack.

Ingredients Serving: 4

  1. Baby Zucchini 300 grams
  2. Paneer grated 100 grams
  3. Tomato 1 small sized
  4. Onion 1 medium sized
  5. Green chillis 2
  6. Mozzarella cheese 1/4th cup
  7. Cooking Oil 1 teaspoon
  8. Salt to taste

Instructions

  1. Clean and trim the sides of zucchini
  2. Cook them in boiling water for 3-4 minutes.
  3. Drain in a colander.
  4. With the help of a fork or scrapper core out the centre.
  5. Chop onion, tomato and green chilli.
  6. In 1 teaspoon of oil first saute onions and green chillis in a pan.
  7. Add tomatos and salt. Cook until tomato becomes soft.
  8. Chop the cored out zucchini masses and add to the pan.
  9. Also add grated paneer and incorporate well.
  10. Add half of mozzarella.
  11. Mix well , remove from heat and transfer to a bowl.
  12. Stuff this prepared mixture to the cored zucchinis.
  13. Sprinkle the remaining mozzarella to the top .
  14. Preheat oven at 200 degree C.
  15. Bake them for about 20 minutes or till the top becomes light golden brown.
