Ingredients Serving: 4

  1. 1 cup pearl barley
  2. 1 cup mix vegetables (babycorn, broccoli florets, aspagares, zucchini)
  3. 1/2 cup tomatoes chopped
  4. 1/2 cup green capsicum chopped in dise
  5. 1/4 cup red capsicum chopped
  6. 1/4 cup yellow capsicum chopoed
  7. 3 tsp garlic chopped
  8. 1 tsp ginger grated
  9. 1 inch cinnamon
  10. 2-3 cloves
  11. 2-3 green chillies slit into half
  12. 1/4 cup green peas
  13. Salt to taste
  14. 1/4 tsp black pepper powder
  15. 2 tsp lemon juice
  16. 1/2 tsp haldi powder
  17. 400ml vegetable stock

Instructions

  1. Firstly soak barley in hot water for 15 minutes and drained.
  2. Heat olive oil in a pressure cooker and cinnamon, clove and add all vegetables and saute on a medium flame for 3-4 .minutes.
  3. Add the soaked and drained barely, garlic, ginger and green chilli and mix well.
  4. And cook for another minute. Then add the tomatoes and cook on a medium flame for 1 minute, while stirring occasionally.
  5. Add all remaining ingridents and mix well mix well.
  6. Add vegetable stock and pressure cook until barley is cooked or pressure 2 whistle.
  7. Remove the pressure cooker from heat and let the pressure release.
  8. Add lemon juice and mix well and serve hot.
