Salted Caramel Sauce with Tamarind

ABOUT Salted Caramel Sauce with Tamarind RECIPE

A drop of this sauce will take the ordinary to extraordinary levels and until you reveal the secret of tamarind in the sauce.

Ingredients Serving: 10

  1. 1 cup sugar
  2. 100 gms butter I used amul butter
  3. 100 gms cream I used amul fresh
  4. 2-3 tbsp tamarind paste dissolved in water
  5. Generous pinch sea salt

Instructions

  1. Place the sugar in a heavy bottomed sauce pan with 2-4 tbsp water over medium heat.
  2. Once the sugar begins to melt and caramalise, swirl the pan, moving the liquid but not stirring.
  3. Cut the butter into medium sized cubes.
  4. Whisk the cream well to mix all solid and watery liquid from the tetra pack. Once the caramel becomes a medium amber colour drop in the cream . Keep swirling the pan. Keep the pan away from your face as bubbles will form.
  5. Drop in the butter piece by piece and gently whisk it in. Allow to come to the boil.
  6. Add in some of the strained tamarind paste with water and whisk. Add the salt.
  7. Allow to come to the boil. Drop a few drops onto a plate, wait till it cools and taste. Add more tamarind accordingly.
  8. Allow the sauce to simmer a bit and cool. Store in a glass jar in the fridge. This quantity fills an empty nutella jar.
  9. Just before serving, pour some into a microwave safe glass and heat in bursts till its as hot as you want it to be.
  10. Serve with desserts and brownies or add to buttercream frosting to make salted caramel buttercream frosting.
  11. Or just dip a spoon into it to satisfy your cravings.
