Ingredients Serving: 3

  1. Khichuri -
  2. 1/3 cup masoor (red lentil) dal, soaked for 30 minutes
  3. 1/3 cup rice, soaked for 30 minutes
  4. 1 potato, cubed
  5. 1/2 cup green peas
  6. 1 cup cauliflower florets
  7. 8-10 beans, cut into 1" pieces
  8. 3 tbsp. mustard oil
  9. 1 tsp. panch phoron
  10. 2 bay leaves
  11. 1-2 dry red chilies
  12. 1 tsp. ginger, chopped
  13. 1/2 tsp. turmeric powder
  14. salt to taste
  15. 4 cups water
  16. 8-10 cashew nuts
  17. 7-8 almonds
  18. 1 tbsp. ghee
  19. Prawn Curry -
  20. 1/2 cup shrimps / prawns, deveined & cleaned
  21. 1 tbsp. mustard oil
  22. 1 tsp. cumin seeds
  23. 1 dry red chili
  24. 1 onion, chopped
  25. 1 tsp. garlic, chopped
  26. 1 tsp. ginger, chopped
  27. 1 tsp. red chili powder
  28. salt to taste
  29. 1/2 tsp. turmeric powder
  30. 1/2 tsp. garam masala powder

Instructions

  1. Prawn Curry - Heat oil in a pan and temper with cumin seeds & dry red chili. Add the onion, ginger and garlic. Saute till light brown.
  2. Add the prawns & all the dry spices. Mix everything well and stir fry on a low flame till the prawns are cooked. When done, keep aside.
  3. Khichuri - Heat 1 tbsp. oil in a pan & saute the veggies (except green peas) till light brown in colour. Drain and keep aside.
  4. Heat remaining oil & temper with bay leaves, red chilies, panch phoron and ginger. Saute for a few seconds.
  5. Add the soaked dal, rice and turmeric powder. Saute for 2 minutes.
  6. Add 4 cups of hot water & bring it to a boil. Cover & simmer till half done.
  7. Add salt, fried veggies, green peas, cashew nuts and almonds. Cover and simmer further till done and all the water is absorbed.
  8. Add the prepared prawn curry & ghee. Give it a stir & switch off the flame.
  9. Garnish with coriander leaves & serve along with papad, lemon wedges, green chilies or / and a side dish.
