Ingredients Serving: 10
For the dough:
1 1/2 cup flour
1/4 cup luke warm water
1 tsp instant dry yeast
1 tbsp sugar
1 tbsp olive oil
Salt 1/2 tsp
Luke warm water to make thr dough
For the pizza sauce :
Seasonal fresh ripe tomatoes -3
2 tbsp Tomatoe sauce
1 small onion chopped fine
1 pod garlic cloves chopped fine
1 tbsp Italian herbs
1 tbsp red chilli flakes
1/4 tsp of rosemary
Pinch of salt
1/2 tsp sugar
2 tsp oil
Other ingredeints :
Amul / grated mozerrella cheese -1/2 cup or more
2 tbsp chopped coriander
Butter for basting
Milk + honey for brushing
Instructions
To make the dough first add the yeast and sugar to the lukewarm water .mix well ,cover and leave for 10 minutes
Take a bowl add the flour and salt , mix well with a wooden spoon
Add the yeast mixture and olive oil to the flour.continue to mix with a wooden spoon
Now invert the dough crumbs on a plain surface.
Use more lukewarm water and knnead for 12 to 15 minutes to form a smooth pliable dough
Apply oil to the innerside of a vessel and dough .put the dough in the oiled vessel .
Cover and leave to rise in a warm place.takes an hour or more
Meanwhile make the sauce.
Chop the tomatoes fine.
Take a sauce pan. Heat some oil
Add the chopped garlic and saute
Now add the onions and saute till soft and transparent.add pinch of salt and 1/2tsp sugar while sauting the onions
Now add the tomatoes .covet and cook till mushy
Add the dried herbs and spices. Add tomatoes sauce and further cook for 5 to 7 minutes.
Switch of the gas and let the thick sauce cool completely.
Punch the risen dough 3 to 4 times and place on a flour dusted surface
Roll it into a large rectangular chapati
Apply the cooled pizza/ matinara sauce all over. Sprinkle or spread some cheese all over generously.
Start rolling tightly from one side
Roll completely.pinch the seam side and roll once or twice. Now make equidistant cuts.
Cut completely and place in a greased tin which is also covered with parchment paper
Apply the honey+ milk wash
Cover and leaves for 20 minutes
Meanwhile preheat oven for 10 minutes at 200 °
Now bake the rolls for 15 to 20 minutes at 200°
After 15 minutes bast with butter and top with some shredded cheese.
Bake and broil further for few minutes till golden
Remove and garnishwith chopped coriander
Leave for 5 minutes in the pan then transfer to a plate directly
Can pull out your roll and have hot or warm with tea or fresh soup
