This soup has goodness os spinach and spri g onions green.

Ingredients Serving: 3

  1. 1.5 cup shredded spinach
  2. 12 mint leaves
  3. 2 tbsp chopped coriander
  4. 1/2 tsp black pepper powder
  5. 1/2 cup chopped spring onions green
  6. 2 tbsp butter
  7. 2 tbsp maida
  8. 1/4 cup fresh cream
  9. For garnish 1 tbsp fresh cream
  10. Salt to taste

Instructions

  1. Combine the spinach, mint leaves, coriander , spring onions green and 4 cup water in a deep non stick pan, mix well and cook on a medium flame for 3 to 4 minutes.
  2. Drain well.
  3. Refreshing using cold water,drain completely
  4. Blend in a mixer to a smooth thick puree. Keep aside.
  5. Heat butter in a pan add maida and cook on a slow flame for 1 minute, while stirring continuously.
  6. Add spinach puree, 2 cups of water, pepper powder, fresh cream and salt, mix well ad cook on a medium flame for 2 to 3 minutes, while stirring continuously.
  7. Serve immediately and garnish with fresh cream
