This is most popular winter's pickle in northern India ...specially in Punjab haryana and U.P....There are many ways for maing this pickle.I have made this time by punjabi method.
Wash peel and chopped all the vegetables
Blanch the vegetables for 2..3 minutes
Keep in sunlight for drying for 8 hours
Now put a pan on heat
Add oil
Add ginger garlic paste
Saute it
Now add all the spices and jaggery
Add vegetables
Mix well and turn off the flame
Add vinegar
After cooling down fill in an airtight jar
Ready to eat after 3 days
