Cucumber cream cheese sandwiches are perfect for tea time parties. They are easy to prepare and can be done in less than half an hour. This recipe has been adapted from Food.com.

8 slices of bread
4 tbsp oil or butter
For cucumber sandwich filling:
4 ounces cream cheese softened at room temperature
2 tbsp Mayonnaise
1/2 tsp deli honey mustard sauce
1 cucumber
1/4 tsp dill seeds
1/2 tsp ground black pepper
1/2 tsp Cumin powder
pinch of black salt
1/2 tsp chopped fresh basil leaves
Instructions
Peel and shred the cucumber. Press the shredded cucumber through a colander to remove excess moisture.
Combine cream cheese, mayonnaise and honey mustard in a bowl. Whisk it by hand till it is smooth and creamy.
Add cucumber, basil, black pepper, cumin powder,dill seeds and pinch of salt to the cream cheese mixture. Mix well by hand.
Heat a grill pan . When it is hot melt a teaspoon of butter or add oil into it. Toast 2 slices of bread till it turns light golden on the bottom side. Apply some butter or oil on the top of the bread, flip and cook the other side till it turns light golden and has grill marks on it. Grill and toast the rest of the slices of bread in this way.
Add generous amount of cucumber cream cheese mixture on one grilled slice of bread. Cover it with another grilled slice of bread. Repeat this to prepare rest of the sandwiches.
Cut the sandwiches into half and serve it immediately. Enjoy this light and creamy cucumber sandwich in snacks or breakfast.
