ABOUT Mini cheesecake basbousa RECIPE

Basbousa is tradionally middle eastern desert, here i have twisted with adding cream cheese,a nd made in muffin tin.

Ingredients Serving: 5

  1. Semolina 1 1/2 cup
  2. Grated Coconut 1/2 cup
  3. Icing sugar 1/4 cup
  4. Cream cheese 1 cup
  5. Butter 1/2 cup
  6. Egg 1
  7. Baking Powder 1 Tsp
  8. Baking soda 1/2 tsp
  9. Vanilla essence 1 tsp
  10. For sugar syrup
  11. Sugar 3/4 cup
  12. Water 1/2 cup
  13. Some pistachioes

Instructions

  1. Preheat oven to 350 F [180 C], grease a muffin tin with butter,and liner too.
  2. Mix together semolina, baking powder,baking soda and icing sugar.
  3. Beat egg,butter,vanilla essence and cream cheese together.
  4. Now mix all together. And pour into greesed muffin tins.
  5. Bake for 35 minutes, or until the top browns.
  6. Take out on wire rack. And let it cool for few minutes.
  7. While the muffins are baking, prepare the syrup. Boil together the sugar and water, until no sugar granules remain. Take off the heat.
  8. Pour onto a slightly cooled muffins separately. The syrup will pool on top, don't worry. It will all get absorbed, and give the most amazing texture. 
  9. Give the muffins a few hours to soak up all the syrup, and then garnish with pistachios.
