Spicy vegetable and paneer pasta

A spicy pasta dish made with vegetables, crumbled cottage cheese, cooked in indian spices.

Ingredients Serving: 3

  1. Pasta of your choice ( this recipe uses penne and macaroni)
  2. Paneer cubes - a handful
  3. Onion - 1 Finely Chopped
  4. Tomato - 1 finely chopped
  5. Capsicum (green, red and yellow) - finely chopped
  6. Red chilli powder - 1 tsp
  7. Channa masala powder - 2 tsp
  8. Tomato Ketchup - 1 tbsp
  9. Red chilli sauce - 1 tsp
  10. Light soy sauce - 1 tsp
  11. Green chilli sauce - 1tsp
  12. Sugar - 1tsp
  13. Ginger - finely chopped - 1tsp
  14. Garlic - finely chopped - 2 tsp
  15. Oil - 2 tsp

Instructions

  1. Add the pasta to boiling water with a little salt and cook until done.
  2. In a pan , heat some oil and add the Ginger and garlic.
  3. Add the onions, sugar and saute for a minute.
  4. Add the tomatoes, red chilli powder, channa masala powder, salt and mix well.
  5. Add a little water so the spices don't burn. Let this cook for a good 2-3 minutes.
  6. Add the capsicum, all the sauces and mix well.
  7. Once the capsicum is half done, crumble the paneer with your hands and add to it. Add the cooked pasta and mix well.
  8. Check for seasoning and adjust.
  9. Turn off the heat and serve hot.
