This mutton Chops is a fusion of South Indian Chettinad style with a touch of American coffee marinade and Palm sugar ,coffee and apple cider vinegar reduction. This dish is not the regular or monthly preparation . This is made on a special occasion and the much awaited dish for everyone in my home during Party time.
In a pressure cooker and oil and ground paste and saute well till raw smell disappear
To it add marinated mutton chops and saute well till the mutton turns pink colour.
Add 3 cups of water and pressure cooker for 15 minutes.
Switch off the flame and wait till steam subsides.
Mix all the reduction ingredients together and boil with the 1/2 cup of water. Let it boil until it comes to sauce consistency.
In a pan add 2 teaspoon of oil and saute chopped potatoes and whole Cherry tomatoes with garlic salt seasoning and freshly ground pepper.
In a Pan transfer the cooked mutton Chops and wait till water thickens.
when it is done transfer to a serving dish and receive the reduction salt and garnish with potatoes ,tomatoes and coriander leaves.
Yummy fusion mutton Chops of Indian and American style is ready to serve with any rice or paratha.
