Roast the brinjals on stove till it changes colour to black. Then remove off the peel of brinjal and smash it. Heat oil, add mustard seeds then add onions saute them till golden then add ginger-garlic paste and green chillies. After sauteing them add tomatoes. Then add all the masala. After some time add the smashed brinjals. Cook for some time till oil leaves the pan. Add coriander while serving.
Take mud tava(mitti ka tava) and heat it on stove. Add salt and water into the bajra atta and make a sticky dough. Then take a ball of dough and roll it with your palms. Give a round shape. Roast it on tava. Spread homemade makkhan on it.
Make buttermilk and add salt and then pour the tempering on top. Serve.
