This is traditional kathiyawaad recipe mostly suitable in rainy and winter season.

Ingredients Serving: 4

  1. 2 Big brinjals used for bharta
  2. 1 bunch spring onions
  3. 2-4 cloves of garlic
  4. 1 big tomato finely chopped
  5. Ginger paste
  6. 1/2 tsp Turmeric
  7. 1 1/2 tsp Red Chilli Powder
  8. 2-3 tsp dhanya jeera powder
  9. Salt to taste
  10. 1 tsp sugar
  11. Coriander leaves for garnishing
  12. For bajra roti-
  13. 1/2 kg bajra atta
  14. Water as required
  15. Salt as required
  16. For tempered chaas-
  17. Jeera
  18. oil or ghee
  19. Curry leaves and salt

Instructions

  1. Roast the brinjals on stove till it changes colour to black. Then remove off the peel of brinjal and smash it. Heat oil, add mustard seeds then add onions saute them till golden then add ginger-garlic paste and green chillies. After sauteing them add tomatoes. Then add all the masala. After some time add the smashed brinjals. Cook for some time till oil leaves the pan. Add coriander while serving.
  2. Take mud tava(mitti ka tava) and heat it on stove. Add salt and water into the bajra atta and make a sticky dough. Then take a ball of dough and roll it with your palms. Give a round shape. Roast it on tava. Spread homemade makkhan on it.
  3. Make buttermilk and add salt and then pour the tempering on top. Serve.
