ABOUT Kesari Bhaat RECIPE

Kesari bhaat is a popular saffron based sweet rice dessert made across South of India. My mom makes this dessert every year during one of the Nine days as prasad when Ganesh ji 's stapana happens.

Ingredients Serving: 4

  1. 1 cup : Raw Basmati Rice
  2. 1 tbsp : Ghee
  3. 1.5 cups : Sugar
  4. 1.5 cups : Water
  5. An inch : Cinnamon
  6. 2 nos : Cloves
  7. 2 nos : Cardamom pods
  8. 4 nos : Pepper corns
  9. A pinch of saffron
  10. Few drops orange food color optional

Instructions

  1. Wash and Soak the Basmati rice in enough water for 10 minutes.
  2. Now add water mentioned to a deep pan and bring this to a boil, later add in the soaked basmati rice.
  3. Next add in the cloves, peppercorns, cinnamon, cardamom pods and cook this covered for 10 minutes.
  4. Once the rice is cooked drain the water and next stir in the saffron along with Sugar.
  5. Cook this on low heat until sugar melts. Continue cooking on low heat until most of the moisture evaporates.
  6. Later turn off the heat and cover with a lid.
  7. Now in a small sauce pan add ghee and fry the nuts of your choice until golden and add it to the sweet saffron rice.
  8. Lastly sprinkle some cardamom powder and food color (dissolved in few drops of water) if using. Give it a good mix and allow this to rest covered atleast for 30 minutes before serving.
  9. Serve it at room temperature for better taste.
