ABOUT Gujarati style Chunky Tomato - Garlic Dip RECIPE

Gujarati cuisine is known for its simplicity, balance of flavours and ingenious use of seasonal ingredients. During the times when Tomatoes were available only during winters we looked forward to the arrival of the tart round variety of beautiful-shiny tomatoes to make soup, ketchup and our favourite subzi. This Chunky Tomato- Garlic Dip is a winter staple in our house. We usually have it with Bhakhri or Millet Rotla. However, this versatile dip tastes good with any flatbread or crackers.

Ingredients Serving: 4

  1. 3 medium sized tomatoes, roughly chopped
  2. 1/4 cup garlic cloves, peeled
  3. a handful of fresh coriander, roughly chopped
  4. 2 teaspoon red chilli powder
  5. 1 tablespoon oil
  6. salt to taste

Instructions

  1. In a chutney grinder jar, add the chopped tomatoes, garlic, coriander, salt and chilli powder. Grind it all to a rough/chunky mix.
  2. Take a small Kadai or pan and add the oil.
  3. Once the oil heats up to smoking point turn off the flame and add the ground tomato mixture.
  4. Stir well. The hot oil and pan will cook the tomatoes just enough.
  5. Transfer to a serving bowl.
  6. Serve with millet crackers, sourdough bread or whole meal grissini.
