ABOUT Grilled Minty Paneer RECIPE

Ingredients Serving: 4

  1. Paneer 14 oz
  2. Marinade 1 : 1/2 bunch of mint
  3. 2 handfuls of baby spinach (or regular)
  4. 2 green chilli
  5. 1 tsp garlic paste or minced garlic
  6. 1/2 bunch fresh coriander
  7. 1 tbsp of Greek yoghurt Or thick curd
  8. Marinade 2: 2 tbsp of Greek yoghurt
  9. 1 tsp turmeric powder
  10. 1 tbsp of red chili powder
  11. 1 tbsp heaped ginger-garlic paste
  12. 1/2 tbsp of garam masala
  13. 1 tbsp of black sesame seeds
  14. 1/2 tsp ajwain (carom seeds)
  15. Salt/garlic salt to taste
  16. 1/2 tsp amchur
  17. Pita bread (optional)
  18. Sliced onion, tomato, cucumber, lettuce as garnish/accompaniment
  19. Lemon juice as per taste
  20. Dash of chaat masala

Instructions

  1. Wash, drain and dry the greens vegetables and herbs.
  2. Blend in mixie all marinade 1 ingredients to a fine paste.
  3. Cut paneer in 2 x 2 in squares and about 1/2" thick and slit them horizontally 3/4 way (not through and through).
  4. Place a teaspoonful of the mint chutney filling in the slit of each slice of paneer, spreading evenly.
  5. Apply marinade 2 all over each slice of paneer. Skewer and grill in a tandoor until lightly browned on the edges.
  6. If you cannot access a tandoor, use skewers under a hot grill. Serve hot with a sprinkling of lemon juice and chaat masala.
