Masala Papad Bruschetta

Ingredients to make Masala Papad Bruschetta

  • 1 French bread or baguette or crusty loaf
  • 1 ripe tomatoes finely chopped
  • 1/4 cup finely chopped onions
  • 1 garlic clove finely chopped or grated
  • 2 tbsp olive oil or butter
  • 1 tsp balsamic vinegar
  • 1/2 tsp deli honey mustard sauce
  • 1/2 tsp black salt or as required
  • 1 papad
  • 10-12 fresh basil leaves or as needed , chiffonade

How to make Masala Papad Bruschetta

  1. Heat a pan and add 1 tablespoon of olive oil or butter. When the oil starts to simmer, add chopped garlic and saute on low medium heat till it turns light and golden. Turn off the heat and take out the garlic along with the oil into a bowl. Allow it to cool for 3-4 minutes.
  2. Add the chopped onions, tomatoes and chiffonade of basil into the bowl containing the garlic and oil. Add balsamic vinegar, honey mustard and black salt. Stir and mix. Let it rest for 10 minutes.
  3. Meantime, cut the bread loaf into diagonal slices to allow maximum surface area. Heat a pan. Add 1 tablespoons of butter or oil. When the oil starts to simmer, add the bread slices. Toast the bread till it turns crispy and golden on both the sides. Take it out on a plate. Toast 4 bread slices in this way.
  4. Add generous amount of the onion tomatoes basil mixture on each toast. Roast a papad in microwave at high for about 1 minute. Crush and sprinkle the roasted papad over the toast. Serve it immediately.

My Tip:

I am sharing the tip to cut a chiffonade of basil. Stack about 10-12 leaves into a neat pile and roll it lengthwise into a fairly tight log. Slice across the log using a sharp knife. The closer together the slices, the finer the chiffonade will be. Fluff the chiffonade with your fingers to separate the shreds. The chiffonade of basil is ready. Use it immediately.
