ABOUT Sweet and tangy veggie pasta. RECIPE

In this pasta i have used vegetables,corns,paneer or can uae tofu.sauce is made of fresh tomatoes.I added small amount of sugar to balance tomatoes.

Ingredients Serving: 2

  1. Boiled penne pasta 1 cup
  2. Sweet corns-3-4 tsp
  3. Carrot-1
  4. Capsicum-1
  5. Brinjal-1
  6. Onion-1
  7. Garlic cloves -7-8
  8. Tomatoes-4
  9. Paneer/tofu-5-6 pieces
  10. Oregano-1 tsp
  11. Black pepper-1/4 th tsp
  12. Chilli flakes-1/4 th tsp
  13. Salt as per taste
  14. Tomato ketchup-3tsp
  15. Sugar 1/4 tsp
  16. Black olives-1 tsp
  17. Cheese-3tsp grated
  18. Butter-4 tsp

Instructions

  1. Take butter in pan.
  2. To it add chopped veggies like brinjal,capsicum,carrot all together.saute them for 5 minutes.
  3. When they are soft take them out on plate.
  4. Again take butter /olive oil ,to it add chopped garlic.
  5. Next add onion,saute for some time .Then add puree of boiled tomatoes.
  6. Add oregano.
  7. Next add red chilli flakes.
  8. Also add black pepper,salt to it.
  9. Cook it till it gets thick in consistency.Then add ketchup and sugar on it..
  10. Add sauted veggies and paneer.
  11. Sweet corns.
  12. Boiled pasta.
  13. Mix well.
  14. Add sliced black olives.
  15. Mix well and serve hot in plate.
  16. Garnish with cheese on top.enjoy
