Potato basket or Aloo tokri chaat is very popular, specially kids love it for their nice shape. It is also very crispy and tasty.

Ingredients Serving: 4

  1. Ingredients for potato basket :
  2. Potatoes - 2 (big size)
  3. Oil - 2 cup (for frying)
  4. Ingredients for chana chat:
  5. 1 1/2 cups dried black chickpeas/kala chana
  6. 1 onion finely chopped
  7. 1 large tomato finely chopped
  8. 2 Chopped Green chillies
  9. 1 teaspoon red chilli powder
  10. 1 teaspoon chaat masala
  11. 1 teaspoon roasted cumin powder
  12. 1 teaspoon dry mango powder
  13. 5 teaspoon lemon juice
  14. 1/2 teaspoon black salt (optional)
  15. 1/4 cup chopped coriander leaves

Instructions

  1. Method of making potato basket or aloo tokri
  2. Wash and peel the potatoes and grate them. Squeeze out the water from the grated potatoes.
  3. Divide the grated potatoes into four equal portions.
  4. Place one portion of grated potato in a big tea strainer and spread on all sides of the strainer, press on top with the small strainer.
  5. Heat oil in a wok. Holdin the two strainers and pressing firmly, add into the hot oil.
  6. Deep fry into hot oil on medium flame, remove the small strainer after some time, cook till potato basket is golden brown. The strainers should be dipped completely into the oil.
  7. Remove the potato filled big strainer from the oil, invert it and tap the strainer softly to unmold the basket.
  8. Repeat the steps to make all the baskets. Keep aside.
  9. Method of making chana chat:
  10. Soak the dry chickpeas over the night or 8-9 hours. Once they are soaked, drain the water. In a pressure cooker add the soaked chickpeas with enough water, pressure cook for 6-7 minutes or till the chickpeas are cooked well.
  11. Once the pressure cooker cools down, drain the cooked chickpeas in a large bowl. Add all the ingredients including boiled chickpeas. Mix well.
  12. Divide the chana chat into four portions and fill each basket or aloo tokri with this chana chaat, top with chopped coriander leaves.
