Rice dumplings are steamed and dunked in a delicious coconutmilk stew.

Ingredients Serving: 2

  1. Rice flour 1 cup
  2. Milk 1 cup
  3. Water 1 cup
  4. Ghee 1 tbsp
  5. Salt 1 tsp
  6. Jaggery 3/4 cup, powdered
  7. Coconut milk, 1 cup, thin
  8. Coconut milk 1 cup, thick
  9. Cardamom 1 tsp, powdered

Instructions

  1. Heat water in a sauce pan, add jaggery and let it dissolve. Bring it to a boil, Filter and set aside.
  2. In a saucepan, mix together roasted rice flour, milk, water, salt and ghee on medium flame.
  3. Using a spatula, mix them well. Once cooled, roll into small balls.
  4. Heat thin coconut milk in a heavy bottomed pan. When it starts boiling, add the balls and simmer it until the balls float on top.
  5. Add powdered cardamom and simmer for two minutes.
  6. Now add the thick coconut milk. Do not boil or cook the coconut milk. Switch off the flame.
  7. Allow to rest for 30 minutes. Let it soak all the goodness. Serve it warm/ chilled.
