Poda Pitha is considered the favourite prasad of Lord Jagannath. The poda pitha preparations begin on Hera Panchami and continue till the bahuda yatra eve. It is a tradition for Lord Jagannath to stop at the Mausi Maa temple during bahuda yatra (return journey) and have a bite of poda pitha before returning to his holy abode. You can find various versions of this cake in Odisha. I prepared Poda Pitha with rice flour, a few spices & the taste was amazing!!
Amazing innovation.
Heat a kadai over a medium flame . Add jaggery and salt to it . Pour water and stir continuously.
Add cardamom powder , crushed black pepper , chopped almond, raisins and grated coconut to it. Mix well.
Now slowly add the rice flour to the boiling mixture & mix well in all the directions to prevent lump formation. Allow it to cook for sometime over a medium to high flame. Ensure that the mixture is not too watery or too thicken.
Once the batter is ready , transfer it to the margarine greased container.
Then heat the cooker and gently pour clean sand into it . Place an aluminium or metal plate onto the sand.
Carefully place the container with batter on it. Let it to cook over a low flame for 1 hour.
Insert a toothpick to check if the pitha is cooked well. If the toothpick comes out clean then the pitha is ready & if it is moist then let it cook a little longer.
Allow the pitha to cool down completely . Take it out from the cooker and leave it to cool for 10 minutes.
Transfer it to a serving plate and cut the pitha into desired shape.
