Coconut butter cookies are very delicious little crunchy bakery biscuits

Ingredients Serving: 8

  1. Salted butter 60 gram
  2. Icing sugar 80 gm
  3. Desiccated coconut 80 gm
  4. All purpose flour 120 gm
  5. Milk 3 tablespoon or as needed
  6. Baking powder 1/4 th teaspoon
  7. Some more desiccated coconut to garnish

Instructions

  1. In a mixing bowl add icing sugar and soft butter and mix till smooth and creamy.
  2. Sieve together flour and baking powder. Add desiccated coconut to it.
  3. Add the flour and coconut mixture to the butter mixture and mix well with your finger tips.
  4. Make a soft dough by gradually adding milk. Use your fingers lightly to make the dough.
  5. Cover and keep the dough in the refrigerator for about 30 minutes.
  6. Preheat oven at 150 degree Centigrade for 10 minutes.
  7. After 30 minutes take out the dough and divide it into 14 to 16 equal parts.
  8. Roll each portion to make a smooth ball and flatten it slightly.
  9. Roll the top side of the cookies in desiccated coconut and arrange them in a baking tray.Place them at some distance.
  10. Bake them at 150 degree Centigrade for about 25 minutes or till light golden crust forms on the top.
  11. Remove from oven and transfer to a wired rack to cool.
  12. Allow the cookies to cool completely and store them in a air tight container.
  13. You can store them for 8-10 days.
