ABOUT Toasted Coconut Marshmallows RECIPE

Toasted Coconut Marshmallows is a delicious sweet dessert or snack made with inexpensive materials present at home.It is made with coconut, sugar, gelatin, liquid gulcose, vanilla essence and few drops of pink gel.

Ingredients Serving: 10

  1. Shredded Coconut 21/2 cups
  2. Granulated sugar 13/4 sugar
  3. Gelatin 18 grams
  4. Liquid gulcose 3/4 cup
  5. Water 1 cup (1/2 + 1/2 ) divided
  6. Icing sugar 20 grams
  7. Vanilla essence 11/2 teaspoon
  8. Pink food colour gel few drops
  9. Salt 1 gram

Instructions

  1. Preheat the oven to 180 degree centigrade.
  2. Spread shredded coconut on a baking tray and bake it for 15 minutes.
  3. Grease the baking tray with vegetable oil and line the bottom of the tray with parchment paper.Spread the toasted coconut evenly.
  4. Add 1/2 cup water and sprinkle gelatin over it.Let it sit for 15 minutes.
  5. In a heavy bottom vessel add the other 1/2 cup water, sugar,salt and liquid gulcose and heat on medium flame.
  6. Stir it till it dissolve.Let it boil for 15 minutes till the candy thermometer reaches 115 degree centigrade.Remove from heat.
  7. Run the stand mixer on slow speed and mix the gelatin mix till it's fluffy.
  8. Pour the sugar syrup to the gelatin mixture slowly and gradually increase the speed .
  9. Beat for 10 minutes till the mixture turns tripled the volume.
  10. Add 1/2 cup Toasted shredded coconut to it and mix well.
  11. Add vanilla essence and pink food colour to it and mix for few seconds.
  12. Transfer the marshmallow mixture to the prepared tray.
  13. Sprinkle the toasted coconut on top of the marshmallow mixture generously.Let it cool for 6 to 8 hours. ( Inactive time)
  14. Remove the marshmallow from the pan on a slightly dusted icing sugar.
  15. Cut the Toasted Coconut Marshmallows into desired shape and dap the cut sides with coconut and icing sugar.
  16. Spongy airy Toasted Coconut Marshmallows are ready to serve.
