Chicken marinated in coconut milk and spices for long hours is grilled along with marinade . A sticky , juicy , coconut flavoured Chicken pieces makes an amazing combination with a sticky textured boiled rice served with hot rasam.
Yummilicious.
In a bowl , take 1 cup freshly extracted thick coconut milk .
Add cumin seeds to the coconut while grinding to extract coconut milk . This gives a rich flavour to the coconut milk .
Add freshly crushed black pepper powder .
Add freshly crushed garlic .
Add ginger paste .
Add turmeric powder and coriander powder .
Add paprika powder .
Add salt .
Add finely chopped parsley to the coconut milk .
Now pour this marinade on the chicken which is kept in a fridge safe container.
Do not forget to make gashes on the chicken pieces .
Mix the chicken and marinade with fingers .
Seal the container tightly and refrigerate overnight / 6 to 8 hours .
Grilling can be done in oven or in pan .
I used a grill pan for grilling .
Heat oil in a grilled pan.
Now drop the marinated chicken pieces along with the marinade on the pan .
Slow grill in low heat for even grilling . This takes about 30 minutes .
Sprinkle white pepper powder on the chicken pieces while grilling .
When the chicken is half done , Sprinkle some toasted coconut flakes .
Continue grilling by flipping sides whenever required .
Add chopped spring onions .
Don’t grill until dry .
A sticky outer texture , a juicy cooked inner texture tastes yummy .
Switch off .
Squeeze lime juice just before serving.
Serve hot.
