ABOUT Grilled Coconut Chicken RECIPE

Chicken marinated in coconut milk and spices for long hours is grilled along with marinade . A sticky , juicy , coconut flavoured Chicken pieces makes an amazing combination with a sticky textured boiled rice served with hot rasam.

Ingredients Serving: 4

  1. Chicken drumsticks and wings mixed 1/2 kilogram
  2. Thick Fresh coconut milk 1 cup
  3. Toasted coconut flakes 2 tablespoons
  4. Cumin seeds 1 tablespoon
  5. Coriander powder 1/2 tablespoon
  6. Paprika powder 1 .5 teaspoon
  7. Black whole pepper coarsely crushed 1 tablespoon
  8. Garlic cloves 6 finely crushed
  9. ginger paste 1/2 tablespoon
  10. Salt 1.5 teaspoon or as preferred
  11. Parsley finely chopped 2 tablespoons
  12. White pepper powder 1/2 tablespoon
  13. Turmeric powder 1 teaspoon
  14. Coconut oil / Olive oil 1.5 tablespoon
  15. Spring onions finely chopped 3 tablespoons

Instructions

  1. In a bowl , take 1 cup freshly extracted thick coconut milk .
  2. Add cumin seeds to the coconut while grinding to extract coconut milk . This gives a rich flavour to the coconut milk .
  3. Add freshly crushed black pepper powder .
  4. Add freshly crushed garlic .
  5. Add ginger paste .
  6. Add turmeric powder and coriander powder .
  7. Add paprika powder .
  8. Add salt .
  9. Add finely chopped parsley to the coconut milk .
  10. Now pour this marinade on the chicken which is kept in a fridge safe container.
  11. Do not forget to make gashes on the chicken pieces .
  12. Mix the chicken and marinade with fingers .
  13. Seal the container tightly and refrigerate overnight / 6 to 8 hours .
  14. Grilling can be done in oven or in pan .
  15. I used a grill pan for grilling .
  16. Heat oil in a grilled pan.
  17. Now drop the marinated chicken pieces along with the marinade on the pan .
  18. Slow grill in low heat for even grilling . This takes about 30 minutes .
  19. Sprinkle white pepper powder on the chicken pieces while grilling .
  20. When the chicken is half done , Sprinkle some toasted coconut flakes .
  21. Continue grilling by flipping sides whenever required .
  22. Add chopped spring onions .
  23. Don’t grill until dry .
  24. A sticky outer texture , a juicy cooked inner texture tastes yummy .
  25. Switch off .
  26. Squeeze lime juice just before serving.
  27. Serve hot.
