In a pot , heat ghee and oil .
Add the whole garam masala ingredients .
Sauté Green chillies .
Sauté finely chopped garlic .
Add ginger garlic paste . Sauté till raw smell leaves.
Add onions and sauté till pink.
Add the drained basmati rice and slow roast rice in low flame . Do toss gently when required .
Meantime , grind the coconut pieces by adding required water to a thick smooth paste .
Extract thick coconut milk .
Then add little water and blend the presses coconut again to extract thin coconut milk .
Coming to the rice , the rice had been gently roasted . Rice shouldn’t turn colour while roasting .
Pour 3 cups coconut milk . First use thick coconut milk . In case required , use thin milk for additional .
Add salt .
Give a gentle stir .
Sprinkle chopped cilantros reserving a few for final garnish .
Cover the pot tightly and cook for 10 minutes under low to medium heat .
After 10 minutes , when aroma starts filling , uncover the pot .
Fluff the pulao with a fork immediately .
Garnish with cilantros .
Serve hot with your favourite side dishes .
