ABOUT Lemon Bundt Cake RECIPE

This recipe is ideal for monsoon season with tea. It makes rainy day more pleasant.

Ingredients Serving: 8

  1. 225 gms all purpose flour
  2. 5 eggs
  3. Zest of 3 lemon
  4. 2 tbsp lemon juice
  5. 1.5 Tsp Baking Powder
  6. 160 gms powdered sugar
  7. 1 cup Butter
  8. 3 tbsp oil
  9. Few drops of yellow colour (optional)
  10. For lemon glaze
  11. 5 tbsp icing sugar
  12. 1 tbsp lemon juice

Instructions

  1. In a mixing bowl , blend powdered sugar,oil,butter and lemon zest until creamy
  2. Add eggs, one at a time and beat well..
  3. Sieve flour ,baking powder in a bowl and keep it aside
  4. Gradually add dry ingredients, cut and fold gently
  5. Now add lemon juice, food color and mix well
  6. Grease a 9 inch Bundt pan. Pour the batter into prepared pan
  7. Bake in a preheated oven at 170 degree for 40 mins or till skewer come out clean
  8. Cool cake on cooling rack
  9. For glaze: Mix icing sugar and.lemon juice till it becomes smooth ,add more sugar if required to attain desired consistency
  10. Drizzle glaze over cooled cake
  11. Slice cake and serve with tea
