Soft, mouth watering and spongy dhoklas.

In a bowl, take besan, rawa, curd, chilli ginger paste, salt, haldi and mix well by adding water. Thus forming a medium consistency batter, without any lumps.
Keep it aside.
Meanwhile, keep the steamer on the gas stove and add 2-3 cups of water.
Grease a thali.
When water is to boil, add eno fruit salt to the batter and mix slightly for few seconds and pour immediately in the thali and steam it for 12-15 minutes by covering it with the lid.
Now, take 1/3rd cup Water, lime juice and sugar and boil. Keep it aside.
After the dhoklas are steamed, remove the thali from the steamer and allow to cool.
Cut the dhoklas diagonally into pieces.
Spead the sugar-lemon-water mixture with the spoon all over the dhoklas.
For tempering, heat oil and add mustard seeds, hing, sesame seeds, green chillies and lastly curry leaves. Temper dhokla with this.
You can garnish dhoklas with fresh coriander and grated coconut.
For chutney; grind peanuts, green chillies, coriander leaves, salt and lime juice and water.

when water is in cooker how can we put thali of batter, it will imerse in water. plz tell
